Tomato Soup

Time 20 min
Ingredients
Poha 1 cup
Boiled and smashed potato 1/2 cup
Finely chopped coriander 1 tbsp
Chaat masala 1/2 tsp
Wheat flour/all purpose flour 1 tbsp + 3 -4 tbsp water
Breadcrumbs 2 tbsp + Crushed cornflakes 2 tbsp
Salt to taste
Oil for shallow fry

Method
Soak poha by adding more 2 tsp water for about 15 min. Then in a mixing bowl mix all ingredients, except breadcrumbs and cornflakes. Make a dough kind of mixture. Mix Wheat flour/all purpose flour with water. Keep it aside. Then divide the dough into 5-6 balls, make any shape of cutlet you want, dip the cutlet in Wheat flour/all purpose flour mixture then into breadcrumbs + cornflakes, shallow fry till it becomes crispy. Serve hot with any sauce and bread.

Tomato Saar

Time 20 min
Ingredients
Tomatoes medium sized red tomatoes 5
Garlic cloves 2
Ginger 1/4 inch
Green chilies 1
Curry leaves 3-4
Chopped coriander for garnishing
Cumin seeds 1 tsp 
Mustard seeds 
1 tsp
Garam masala 1/4 tsp
Pinch  of asafoetida
salt to taste
Oil 2
 tsp 
1 tsp sugar
Method
Make cuts on outer surface of tomatoes and boil, along with ginger, garlic, chili till soft. I usually microwave for 4 min along with ginger, garlic, green chili. Then remove the skin and seeds if possible and purée in a grinder. Now heat oil in kadai add mustard and cumin seeds. After mustard seeds pops out, add asafoetida, curry leaves. Then add puree, mix well. Then add garam masala, sugar and salt. Also add water (approximately 1 cup) to this purée as per the desired consistency. 
Simmer for 3-4 min. Garnish with lots of coriander and serve hot with rice.

Onion Curd Salad / Dahi Kanda


Time 10 min
Ingredients
Chopped onion 2 big size Lenthwise chopped
Chopped tomato 1 big size
Curd 2 tbsp
Salt to taste
Sugar to taste

Method
Length wise cut onion, add salt, mix well, then add water, mix well, completely remove water. This way onions spicyness will get removed. Then to this add chopped tomato, coriander, curd and sugar to taste. Serve with non veg items.

Tip
In kolhapur this is traditionally served with every non veg item.
U need to chose good pinkish onion to make this dahi kanda.

Masala Pav

Time 40 min
Ingredients
Finely chopped onion 1 big size
Finely chopped tomato 1 medium size
Chopped capsicum 1/4 cup
Pav bhaji masala 1-2 tsp
Tomato sauce 2 tbsp
Butter 3 tbsp
Salt to taste

Buns / pav

Method
Heat butter in pan, add onion and tomato, saute till onion turns light golden brown. Then add tomato sauce, capsicum, pav bhaji masala, salt. Fry and stir well for about 4-5 min.  Switch off the flame. Keep it aside.
Take a bun/pav, cut at the center, apply butter on inside the bun/pav, roast on tava. Then add mixture at the center. Close and then roast on both sides.

Toast Sandwich

Time 15 min
Ingredients
Bread 4 slices
Boiled potato slices 7-8 
Onion 1 medium size (peeled and chopped lengthwise)
Cucumber slices 7-8
Boiled beetroot slices 7-8
Tomato slices 7-8
Sandwitch masala 1/2 tsp or black salt 4 pinch + chaat masala 2 pinch
Salt to taste
Green chatney 1/2 tsp
Butter 2 tsp

Method
Take two slices of bread. Apply butter on both surfaces of bread. Sprinkle sandwitch masala and apply green chutney on one side of both bread slices. Now on one slice where sadwitch masala is sprinkle, put layers of cucumber, onion, tomato, beetroot, potato, sprinkle sandwitch masala. Now place other bread slice on top of it. Toast it in toast maker till it is done. 

Tip
I usually avoid adding coconut for the sake of cholesterol.

Tomato Bhaji

Time 15 min
Ingredients
Finely chopped onion 1 medium size
Tomatoes 2 big size chopped into cubes (it should not be finely chopped)
Red chili powder 1  tsp / Kolhapuri masala 1 tsp
Turmeric powder 1/4 tsp
Jaggery 1/2 tsp
Roasted groundnut powder 1 tbsp
Mustard seeds 1/4 tsp
Cumin seeds 1/4 tsp
Coriander 1 tsp for garnishing
Oil 1-1.5 tbsp
Salt to taste

Method
Heat oil in pan, add mustard and cumin seeds, after it pops out then add onion, saute till onion turns golden brown. Then add red chili powder/ kolhapuri kanda lasun masala, Turmeric powder fry for about 2-3 min. Stir fast to avoid burning. Keep the low flame. Now add chopped tomato to the pan and mix well for 2-3 min. Tomato will start leaving water, that is why water is not required. Then add jaggery, salt, mix well. Cover with lid. Cook on low flame for about 3-4 min. Now add groundnut powder. Mix well. Cover with lid. Cook for 5-6 min. Garnish with coriander.


Tip
In this recipe it is not required to cook tomato completely, even half cooked tomato tastes good.

Ingredients

Tomato Salad

Time 15 min
Ingredients
Tomato 2 large size cut into pieces
Curd 1 tbsp
Sugar 1/4 tsp
Coriander for garnishing
Seasoning
Curry leaves
Mustard seeds 1/4 tsp
Cumin seeds 1/4 tsp
Pinch of Asafoetida
Oil 1/2 tsp
Green chilies 1 cut into pieces
Salt to taste

Method
Take chopped tomato in a mixing bowl. Keep it aside. Prepare seasoning. Take oil in seasoning / saute pan heat the oil, add mustard, cumin, asafoetida, curry leaves, green chilies.Mustard seeds will pop out. Then switch off the flame. Add this to the mixing bowl. Mix well. Then add curd and sugar. Add salt at the time of serving.

Tip
I have added very little curd for this salad in the picture. Usually i add less curd in tomato salad than cucumber salad.

Cucumber Salad / Kakdichi Koshimbir

Time 10 min
Ingredients
Cucumber 2 medium sized peeled and grated
Tomato 2 large size cut into pieces
Curd 1/2 cup
Sugar 1/4 tsp
Groundnut powder 2 tbsp
Seasoning
Curry leaves 3-4
Mustard seeds 1/4 tsp
Cumin seeds 1/4 tsp
Pinch of Asafoetida
Oil 1 tsp
Green chilies 2 cut into pieces
Salt to taste

Method
Mix Cucumber and tomato in a mixing bowl. Take oil in seasoning pan heat the oil, add mustard, cumin, asafoetida, curry leaves, green chilies. Mustard seeds will pop out. Then switch off the flame. Add this to the mixing bowl. Mix well. Then add ground nut powder, curd and sugar. Add salt at the time of serving because after adding salt cucumber will start leaving water.

Tip
Generally salt is added to the cucumber then it starts leaving water. To remove the water press cucumber then slowly water will come out. Drain the water and then add the seasoning and remaining material. But i usually do not remove water. It is said that if this process of removing water is carried out then the person having cucumber salad will not have cold and cough.

Tomato Omelette

Time 20 min
Ingredients
Chickpeas flour / Besan 1 cup
Onion 2 medium size (peeled and cut into very small cubes)
Tomato 1 medium size ( cut into small pieces)
Dhana jeera powder 1/4 tsp
Turmeric Powder 1/4 tsp
Carom seeds (Ajwain) 1/4 tsp
Freshly cut coriander 2 tsp
Red Chili powder 1 tsp
Water 1/2 cup
Baking soda  1-2 pinch
Salt to taste
Oil for shallow fry 1/4 cup

Method
To make a batter, take besan in a bowl then mix with the remaining ingredients. The consistency of the mixture should be like dosa.  Take fry pan, heat on a medium flame. Apply oil evenly on fry pan. Pour the mixture on fry pan, spread evenly. Keep medium flame. Apply oil on the upper surface of omelette. After 6-7 min turn upside down and shallow fry for 6-7 min (Time depends upon how crispy omelette you want )
Tip
U can add green cut chilies instead of red chili powder.
