Spinach Bread Omelette


Ingredients
Bread slices 4-5
Finely chopped spinach 1/2 cup
Finely chopped onion 1/4 cup
Besan 2 tbsp
Corn flour / aararoot flour 2 tbsp
Chaat masala 1/4 tsp
Red chili powder 1/5 tsp
Water 2 tbsp
Salt to taste
Oil for shallow fry

Method
Make a batter adding all ingredients. Batter should be like idli batter. Dip the bread slice in batter on both sides, then again dip in soyachunk powder and shallow fry on non stick pan on both sides till golden brown. 
Serve with sauce.

Tip
Aararoot powder works as a good thickening agent and rich in proteins so i use aararoot powder instead of corn flour.

Variation
With same ingredients i added fresh crushed corn and brown bread. It tasted wonderful with mint chutney.

Bread Pakoda


Time 30 min
Ingredients
Bread slices 4-5 (cut at center to make triangle)
Potatoes 2 Big sized, boiled and peeled
Green Chillies 2
Garlic clove 2
Ginger 1/2 inch
Curry leaves 3-4
Coriander 2 tbsp
Sugar 1/2 tsp
For tempering
Oil 1 tbsp
Mustard Seeds 1/5 tsp
Cumin Seeds 1/4 tsp
Turmeric powder 1/2 tsp
For Batter
Chickpea Flour (Besan) 1.5 cup
Turmeric Powder 1/2 tsp
Garam masala 1/4 tsp
Salt to taste
Pinch of baking soda

Method
1. Mash potatoes in such a way to keep chunks of potatoes arround 1/2 inch size.
2. Heat oil in pan. Then add mustard seeds, cumin seeds, curry leaves, green chili+ginger+garlic paste. Then add turmeric powder, sugar, salt to taste. Switch off the flame. Keep in mind to do tempering using low flame.
3. Then add mash potatoes and coriander leaves in the pan. Mix well. Cool it. Make 7-8 balls of 3 inch size round in shape but little flat at the center.
5. To make batter add besan, turmeric powder, garam masala, salt, water and two pinch of baking soda. Make batter not thin or thick.
6. Heat oil in wok. Add enough oil so that vada can be deep fried evenly.
7. Take two bread slices (triangles) between two slices place one ball of batata, then press bread gently using palm. Adjust the stuffing so that it doent come out. Dip the bread in batter. Make sure that bread is entirely coated by the batter. Fry till golden brown.
7. Serve with 3 in 1 Chutney or mint or sweet chutney.

Soya French Toast


Time 40 min
Ingredients
Bread slices 4-5
Soya chunks powder 1/2 cup
Besan 2 tbsp
Corn flour / aararoot flour 2 tbsp
Chaat masala 1/4 tsp
Red chili powder 1/5 tsp
Water 2 tbsp
Salt to taste
Oil for shallow fry

Method
If you do not have soyachunks powder, then just crush soya chunks in blender to make powder.
Make batter adding all remaining ingredients. Batter should be like idli batter. Dip the bread slice in batter on both sides, then again dip in soyachunk powder (coat very well with soya powder from all sides) and shallow fry on pan on both sides till golden brown. 
Serve with sauce.

Bread Upma / Bhaji



Time 10 min
Ingredients
Bread slices 8-10
Chopped onion 1 big size
Cumin seeds 1/4 tsp
Turmeric powder 1/4 tsp
Mustard seeds 1/4 tsp
Chopped green chilies 2-3
Curry leaves 4-5
Salt to taste
Sugar 1/4 tsp
Oil 2 tbsp
Coriander for garnishing

Method
Cut bread slices in cube shape. Keep it aside.
In a saute pan heat oil, add mustard seeds, cumin seeds, curry leaves, green chilies. After mustard seeds pops out add onion fry till it turns golden brown. Then add turmeric powder, salt, sugar, mix well. Then add bread, mix well and fry for 4-5 min. Garnish with coriander and serve hot.

French Toast

Time 10 min
Ingredients
Eggs 2
Bread slices 4
Pepper powder ¼ tsp or as per need
Cumin seeds ¼ tsp optional
Salt to taste
Oil 2 tbsp
Method
Beat eggs, add pepper, salt.  Mix well. Heat non stick pan, apply oil, dip bread into beaten eggs, keep it on pan, roast for 3-4 min, keep high flame, apply oil on upper surface and then flip to roast on other side. Serve with tomato / chili garlic sauce.

Garlic Cheese Toast

Time 15 min
Ingredients
Bread 4 slices
Mayonnaise sauce / any creamy cheese 2 tbsp
Garlic clove 3-4 crushed to make smooth paste
Pepper powder 1/4 tsp
Oregano 1/4 tsp
Butter 2 tsp
Salt to taste


Method
Mix cheese, garlic paste, pepper, oregano, salt. Keep it aside. Apply this mixture on one side of bread. On the other side of bread apply butter. Heat pan, keep butter side bread on tava/pan. Roast for 4-5 min. Or keep in microwave on grill for 3-4 min at 900 watt. Serve hot with any sauce.

Toast Sandwich

Time 15 min
Ingredients
Bread 4 slices
Boiled potato slices 7-8 
Onion 1 medium size (peeled and chopped lengthwise)
Cucumber slices 7-8
Boiled beetroot slices 7-8
Tomato slices 7-8
Sandwitch masala 1/2 tsp or black salt 4 pinch + chaat masala 2 pinch
Salt to taste
Green chatney 1/2 tsp
Butter 2 tsp

Method
Take two slices of bread. Apply butter on both surfaces of bread. Sprinkle sandwitch masala and apply green chutney on one side of both bread slices. Now on one slice where sadwitch masala is sprinkle, put layers of cucumber, onion, tomato, beetroot, potato, sprinkle sandwitch masala. Now place other bread slice on top of it. Toast it in toast maker till it is done. 

Tip
I usually avoid adding coconut for the sake of cholesterol.
