Kadabu


Time 15 min
Ingredients
For stuffing
Chana daal 1 cup
Jaggery 3/4 cup or more as per the taste
Cardamom / Velchi powder 1/2 tsp

Dough
Wheat flour 1 cup
Semolina 1 tsp
Oil 2 tsp
Water 1/2 cup
Salt to taste

Oil for frying

Method
For dough
First prepare dough. Add oil, salt and water to the semolina and wheat flour. Then knead the dough. It should be not hard or soft. Keep it aside.
For stuffing preparation
Pressure cook chana daal for 4 whistles. After the lid is removed take daal in non stick pan. 
Switch on the flame. Then add grated jaggery and cardamom powder. Let jaggery melt. Mix well. It should not stick to pan. Your stuffing is ready.
Actual method
Now make 7-8 balls  of dough of 1 inch in size. Roll one ball with rolling pin round in shape for about 4 inch. Add stuffing at the center and then put half of on the remaining half portion of kadabu. Using fingers gently press at the corners. Follow the same procedure for remaining balls. Deep fry till golden brown in colour. Serve hot.

Paneer Whey Kheer

Time 15 min
Ingredients
Leftover panner water 1/2 lit (whatever water left out after making panner)
Jaggery 1/4 cup or as per ur taste
Cardamom / Velchi popwder 1/4 tsp
Semolina /Rava 2  tbsp
Ghee 1 tbsp
Pinch of salt

Method
When milk is curdled while making paneer we hang in that milk in muslin cloth so whatever water is left out i have used for making this kheer
Boil the whey in pan. Add roasted semolina. Stir well. Rava will get swell. Now add jaggery,  pinch of salt and cardamom powder. Stir well to get uniform consistency. Cook for 5 -6 min. Switch off the flame. Allow it to cool. Keep it in refrigerator. Serve chill.

Kolhapuri Special Gavachi Kheer


Time 40 min
Ingredients
Full fat milk 1 lit
Sugar 1 cup or jaggery 1 cup as per ur taste
Cardamom / Velchi powder 1/2 tsp
Broken Wheat 1/2 cup (It is called Khapli Gahoo in Kolhapur which you will able to get in maket in Ganapati Festival))
Basmati rice 2 - 3  tbsp 
Dry fruits (Cashewnuts, Almond, Pista, Kismis) 1 cup
Kharik big pieces (Dry khajoor) 1/4 cup
Ghee 2 tbsp
Fresh coconut paste 1 cup
Kesar soaked in milk 1 tsp
Water 2 cup
Pinch of salt

Method
Wash the wheat. Then in 2 cups of water let it soak overnight. Then pressure cook wheat and rice along with same water and 1/4 tsp salt for 4-5 whistles. Let it dry for 10-15 min. Then blend it in mixer to make coarse powder. Now add water 1-1.1/2 cup, cook in cooker for 2-3 whistles. Allow it to cool. Keep it aside.
Heat the vessel add ghee, add cooked wheat and rice, freshly grounded coconut and dry fruits. Mix well. Add 2 cups of water and Let it cook by covering lid for 15-20 min. (Pl stir meanwhile to check water level if required add water) Then add velchi powder, milk. jaggery, kesar. Mix well. Cook for about 10-15 min on low flame. U can add more milk as per the consistency of kheer you want, means thick or thin. Allow it to cool. Keep it in refrigerator. Serve chill.

Tip
If you dont get khapli gahoo then you can use regular wheat. Wash wheat with water. Then keep it for 2 hrs. Then blend in blender till it is half broken. Use this one for kheer.

Gulavani


Time 5 min
Ingredients
Jaggery 1/4 cup
Water 1 cup

Method
Heat pan by adding water. Then add jaggery and dissolve well by stirring continuously for 4-5 min. Then switch off flame. Add milk and serve with puran poli. (U can eat with milk or without milk)

Gul Shevya


Time 10 min
Ingredients
Roasted vermicelli 1 cup 
Jaggery 1/2 cup
Cardamom powder 1/4 tsp
Hot water 1/2 cup or little more
Ghee 1.5 tbsp

Method
Heat oil in pan, shevya roast for 4-5 min on medium flame till turns light golden in colour. Then add hot water and smashed jaggery. Mix well. Cook for 3-4 min till jaggery is melt and water is soaked. If it becomes very dry add 1-2 tbsp water. Serve as it is or with milk.

Tip
I do use homemade whole wheat shevya.
It is also called aalavanichya shevya.

Groundnut Jaggery Paratha / Gul Poli

Time 10 Min
Ingredients
For dough
Wheat flour  1 cup
Salt to taste
Oil 2-3 tsp

For stuffing
Grated jaggery 1/2 cup
Roasted groundnut powder 1/2 cup

Wheat flour 1/4 cup for dusting
Iron Tava
Butter 3-4 tsp

Method
Mix grated jaggery and groundnut powder. Keep it aside. 
Then in another mixing bowl, Knead the dough adding all the ingredients. Keep it aside for 15-20 min. The dough should not be too soft or too hard. 
Then make 2 -3 portions of dough. Take one portion of dough apply little flour on the polpat or flat surface. Then roll gently to make chapati of size 7-8 inch in size. Now add spoonful of stuffing at the center, close all sides by taking at the center. Gently press, and now roll to make paratha. Then heat the tava on high flame for 2-3 min then make a low flame. Then put paratha on tava and apply little butter on upper side. Let it be for 1-2 min. Then flip the paratha and roast. At this stage make medium flame. Roast the paratha for about 4-5 min on medium flame till it becomes light golden brown.

Sweet Appe / Appam


Time 15 min
Ingredients
Kolum rice 1 cup
Fresh coconut small pieces 2 tbsp
Jaggery 3/4 cup
Poha 1/4 cup
Cardamom powder 1/4 tsp
1 pinch of Salt
Ghee 2-3 tbsp

Method
Soak rice and poha separately for 4-5 hours. Remove water completely from rice and blend with jaggery & poha in blender (By not adding water). Now keep this batter which is little thicker than idli batter overnight. Next day add coconut pieces and mix well. 
Now heat appe patra, add ghee, then add one spoonful of batter in every mould, (mould should be half filled) let it cook for 2-3 min then flip, cook again for 2 min. Serve hot.



Sweet Appe / Appam


Time 15 min
Ingredients

Malida / Chapati Ladoo / Churma


Ingredients
For dough
Wheat flour  1 cup
Oil 2-3 tsp
Salt to taste

Cardamom powder 1/4 tsp
Jaggery 1/2 cup
Ghee 2 tsp
Poppy seeds 1/2 tsp
Fennel seeds powder 1/4 tsp

Wheat flour 1/4 cup for dusting
Iron Tava
Ghee 1-2 tsp

Method
Dough preparation
Knead the dough just like chapati. The dough should not be too soft or too hard. Keep it aside for 15 min. Then divide into 3-4 portions. Roll over to make chapatis. Make little thicker chapatis than normal chapatis. Allow it to cool.
Now grind these chapatis in the mixer to make coarse powder. To this add grated jaggery, fennel seeds powder, cardamom powder and ghee. Mix well. Make ladoos, sprinkle poppy seeds from outside.

Tip
U can use leftover chapatis also. But tastes great with fresh ones.
This is especially done at the the time of Mohrram.

Wheat flour/Maida 1 cup
Semolina 2 tsp
Ghee 3 tsp
Water 1/2 cup
Salt to taste

Method
For dough
First prepare dough. Heat ghee in kadai, then pour it in maida, salt, semolina mixture. Allow it to cool for 3-4 min, then knead the dough. It should be not hard nor soft. Keep it aside atleast for 15 min. 
For stuffing preparation
Grate the fresh coconut. Take only white portion and avoid black skin. Now take grated coconut in thick bottom pan, add jaggery and velchi powder, little salt. Switch on the flame. As soon as pan gets heated the coconut will start leaving water. Stir continuously for 5 min to avoid burning. Now add khoya to the mixture. Again stir for about 5 min. till little moisture remains in the pan. Switch off the flame. The mixture should be moist and should not be dry. 

Actual Stuffing
Divide dough into round balls of 1 inch in size. Roll with rolling pin to make small chapati of 4-5 inch in size, add 1 spoon of saran / stuffing at the center. Now fold the sides of chapati at the center to make nice shape. Make remaining modaks accordingly.
Keep modak in idli stand and steam for about 10 min. Fry these modaks in deep kadai till golden in colour, use olive oil for frying, it consumes less oil.

Rice Modak


Time 45 min
Ingredients

Grated fresh coconut 1 cup
Jaggery 1/2 cup or more as per the taste
Pedha / Khava/ Khoya 1 tbsp
Cardamom / Velchi powder 1/2 tsp
Pinch of Salt
Dough
Basmati rice flour 1 cup
Ghee 1 tsp
Water 1 cup
Salt to taste
For steaming
Idli stand for steaming

Method
For dough
Boil water in the vessel. Add ghee and salt. Stir well. Then add rice flour slowly by stirring continuously. Then switch off the flame. Cover with lid and keep aside for 10 min. Then knead the dough. It should be not hard or soft. Keep it aside. 
For stuffing preparation
Grate the fresh coconut. Take only white portion and avoid black skin. Now add grated coconut in thick bottom pan, add jaggery and velchi powder, salt. Switch on the flame. As soon as pan gets heated the coconut will start leaving water. Stir continuously for 5 min to avoid burning. Now add khoya to the mixture. Again stir for about 5 min. till little moisture remains in the pan. Switch off the flame. The mixture should be moist and should not be dry.
