Cucumber / Kakdi Dosa

Time 15 min
Ingredients
Dosa batter 1 cup
Grated carrot 2 tbsp
Grated onion 2 tbsp
Grated cucumber 1/4 cup
Grated ginger 1/4 tsp
Butter 2 tbsp 
Salt to taste

Method
Mix carrot, cucumber, ginger, onion, salt and batter.
Heat non stick pan, sprinkle salt water (2 tbsp water+1/4 tsp salt) all over the pan.
Then immediately pour spoonful of batter at the center, with the help of spoon spread batter fast in circular fashion.
Apply 1tsp ghee all over the dosa, then roll dosa and serve hot.

Cucumber Thalipeeth


Time 15 Min
Ingredients
Bhajani peeth /flour  1 cup
Onion 1 big size
Cucumber 1 medium size
Coriander 2 tsp
Turmeric powder 1/4 tsp
Ginger 1/2 inch
Garlic 3-4
Green chilies 2-3
Salt to taste
Iron Tava
Butter 2 tsp

Method
Grind in mixer all ingredients except butter and make a coarse paste. Then take a mixing bowl add paste and flour. Mix well. Do not add water because cucumber & onion will have lot of water content. The mixture will not be like chapati or bhakri dough but watery. Then Take muslin cloth apply water to it. Let it completely wet. Then add spoonful of mixture on cloth. Apply oil on hand and press to make thalipeeth of size around 4-5 inch. Turn on the flame and keep the tava on medium flame. Apply butter to the tava. Now lift the cloth carefully and then put the talipeeth side on tava, thalipeeth will get attached to the tava, now remove the cloth. Roast the thalipeeth by applying butter till golden in colour. The talipeeth will be soft because of cucumber. Serve hot with curd, tomato or chili garlic sauce.

Pepper Cucumber Salad

Time 10 min
Ingredients
Finely chopped cucumber 1 cup
Pepper powder 1/5 tsp
Curd 1/4 cup
Pinch of mint powder or fresh crushed mint powder (optional)
Salt to taste

Method
Mix all ingredients and serve chill.

Toast Sandwich

Time 15 min
Ingredients
Bread 4 slices
Boiled potato slices 7-8 
Onion 1 medium size (peeled and chopped lengthwise)
Cucumber slices 7-8
Boiled beetroot slices 7-8
Tomato slices 7-8
Sandwitch masala 1/2 tsp or black salt 4 pinch + chaat masala 2 pinch
Salt to taste
Green chatney 1/2 tsp
Butter 2 tsp

Method
Take two slices of bread. Apply butter on both surfaces of bread. Sprinkle sandwitch masala and apply green chutney on one side of both bread slices. Now on one slice where sadwitch masala is sprinkle, put layers of cucumber, onion, tomato, beetroot, potato, sprinkle sandwitch masala. Now place other bread slice on top of it. Toast it in toast maker till it is done. 

Tip
I usually avoid adding coconut for the sake of cholesterol.

Cucumber Salad / Kakdichi Koshimbir

Time 10 min
Ingredients
Cucumber 2 medium sized peeled and grated
Tomato 2 large size cut into pieces
Curd 1/2 cup
Sugar 1/4 tsp
Groundnut powder 2 tbsp
Seasoning
Curry leaves 3-4
Mustard seeds 1/4 tsp
Cumin seeds 1/4 tsp
Pinch of Asafoetida
Oil 1 tsp
Green chilies 2 cut into pieces
Salt to taste

Method
Mix Cucumber and tomato in a mixing bowl. Take oil in seasoning pan heat the oil, add mustard, cumin, asafoetida, curry leaves, green chilies. Mustard seeds will pop out. Then switch off the flame. Add this to the mixing bowl. Mix well. Then add ground nut powder, curd and sugar. Add salt at the time of serving because after adding salt cucumber will start leaving water.

Tip
Generally salt is added to the cucumber then it starts leaving water. To remove the water press cucumber then slowly water will come out. Drain the water and then add the seasoning and remaining material. But i usually do not remove water. It is said that if this process of removing water is carried out then the person having cucumber salad will not have cold and cough.
