Dal Vada


Time 30 min
Ingredients
Chana daal 1/4 cup
Masoor dal 1/4 cup
Moong dal 1/4 cup
Chawli/black eyed beans 1/4 tsp
Turmeric Powder 1/4 tsp
Red chili powder 1/4 tsp
Coriander powder 1/4 tsp
Carom seeds (Ajwain) 1/4 tsp
Freshly cut coriander 1 tsp
Green chilies 2
Cumin seeds 1/2 tsp
Fenugreek seeds 1/4 tsp
Curry leaves 3-4
Baking soda  2-3 pinch
Salt to taste
Oil for deep fry

Method
Soak all daal in hot water for about one hour with cumin and fenugreek seeds. Completely drain the water from daal, transfer it in the mixer vessel, then add remaining ingredients except ajwain and baking soda, Blend it in mixer. Make a coarse paste. Take out from the mixer vessel, into the bowl, then add ajwain, and baking soda. Mix well. The consistency of the mixture should be little thicker than bhaji batter.  Divide into 8-10 balls. Take one ball in hand apply little oil on palm gently press to make flat but round dal vada. Deep fry untill golden broun and crispy. It need to be served hot with sauce.

Tip
U can add more chilies as per your taste
U can add 1 big size tomato in the mixer while blending. If tomato is added then to make batter u need to add less water, because tomato contains water.

Vangyache Masala Kaap


Time 20 min
Ingredients
Eggplant (thin sliced ) 1 medium size  (10-12 slices) (i use eggplant especially used for bharit)
Gram flour (Besan) 1/4 cup
Rice flour  1/4 cup
Cornflour 1/4 cup
Red chili powder 1/2 tsp
Garam masala 1/4 tsp
Turmeric Powder 1/4 tsp
Amchur powder 1/2 tsp
Coriander powder 1/2 tsp
Salt to taste
Oil shallow frying

Method
Make not thin nor thick slices of eggplant. Then deep slices in bowl containing water and salt. Keep it for 1 hr or atleast 1/2 hr. 
Mix all ingredients in a shallow plate. Do not add water. Keep it aside.
Heat little oil in non stick tava. Then take one slice from bowl containing water and salt, drain water then dip in masala mixture upside down and then drop them in flat non stick tava, shallow fry till golden brown. Shallow fry from both sides adding little oil. Serve hot.

Tip
Because of moisture of slices the masala mixture gets stick to slices.

Kalela Fritters / Bhajis


Time 20 min
Ingredients
Bittergourd 2-3 small size
Gram flour (Besan) 2 tbsp
Makai flour 2 tbsp
Rice flour 2 tbsp
Red chili powder 1/2 tsp
Turmeric Powder 1/4 tsp
Water 3-4 tbsp or more
Pinch of baking soda
Salt to taste
Oil fry frying

Method
Make thin slices of bitter gourd. Apply turmeric powder and salt. keep it aside for 15 min.
To make batter, mix all ingredients (keep in mind that you had added salt to bittergourd too) in a mixing bowl. The consistency of the batter should be in such a way that if you hold it in spoon it should not fall so easily. It means it should not be very watery. Keep batter for 2 -3 min aside. Heat the oil in kadai. Then take one slice apply batter and then drop them in kadai, deep fry till golden brown. Remove from oil and soak in the tissue paper to remove excess oil.

Mango Condensed Pulp



Time 10 min  
Ingredients
Mango pulp 2 cups
Sugar 1/2 cup

Method
Blend in blender mango pulp and sugar. Pour this pulp into thick bottom pan, stir continuously after 5-6 min, water of mango will go away and it will become thick/condensed. Allow it to cool. Store in air tight container.
You can keep this in refrigerator for 4-5 months. Use this for making amrakhand, mango icecream etc.

Kairiche Saar / Mango Soup

Time 15 min
Ingredients
Raw mango pulp 0.5 cup
Water 0.5 cup
Jaggery little less than 0.5 cup
Salt to taste
For seasoning
Mustard seeds 1/4 tsp
Cumin seeds 1/4 tsp
Asafoetida 1/4 tsp
Curry leaves 1tsp
Coriander Green chilies paste 2 tbsp ( 1 cup coriander + 2 green chilies)
Oil 1 tsp

Method
Pressure cook one medium size raw mango for 2 whistles. Allow it to cool. Take out pulp. It will be approximately 0.5 cup. Now blend pulp and jaggery in blender.
Heat oil in kadai. Add mustard seeds, Cumin seeds, curry leaves. After seeds are popped out immediately add mango pulp and paste. Mix well. Add salt. Simmer for 4-5 min. Serve hot. It taste good with rice or just as it is.

Mango Kadhi

Time 15 min
Ingredients
Ripe mango pulp 0.5 cup
Water 0.5 cup
Jaggery 1 tbsp cup
Red chilies 2
Turmeric powder 1/5 tsp
Salt to taste
Coconut paste 1/4 cup / coconut milk 1/2 cup
Ginger 1/4 inch
Mustard seeds 1/4 tsp
Cumin seeds 1/4 tsp
Asafoetida 2 pinch
Curry leaves 4-5
Oil 1 tsp


Method
Blend mango pulp and jaggery in blender. Keep it aside.
Make paste of coconut, ginger and red chilies. 
Heat oil in kadai. Add mustard seeds, cumin seeds, asafoetida and curry leaves. After seeds are popped out immediately add mango pulp, water and paste. Mix well. Simmer for 4-5 min. Add salt at the time of serving. It taste good with rice.

French Fries in Indian Style

Time 15 min
Ingredients
big size potatoes 2
Oil for frying
Salt to taste
Water 6-7 cups
Alum

Method
Peel off potato make french fries with the help of cutter or if you dont have then do it with knife. It should be 1/2 inch in width and length depend on your size of potato. 
Heat water in pan, after it boils add salt and fries. Then insert alum in water and move your hand in circular fashion, then immediately remove alum. Stir well for 2-3 min. Then switched off the flame. Remove slices from water on to a cotton cloth. With the help of another cotton cloth remove water from slices. Water should get removed. Allow it to cool for 5-6 min.
Then heat oil in kadai. After oil gets hot then add fries and fry till becomes crispy. The flame should be constantly medium high throughout procedure. After it is removed from kadai keep it on tissue paper to remove excess oil. Sprinkle salt & pepper and serve.

Dudhi Raita

Time 10 min
Ingredients
Dudhi 1/2 cup peeled and grated
Curd 1/2 cup
Sugar 1/4 tsp
Seasoning
Curry leaves 3-4
Mustard seeds 1/4 tsp
Cumin seeds 1/4 tsp
Pinch of Asafoetida
Oil 1/2 tsp
Green chilies 1 cut into small pieces
Salt to taste

Method
Steam grated dudhi for 7-8 min. Allow it to cool. 
Mix dudhi and curd very well by adding sugar and salt in mixing ball. 
Heat oil in pan, add mustard, cumin, asafoetida, curry leaves, green chilies. Mustard seeds will pop out. Then switch off the flame. Add this to the mixing bowl. Mix well. Serve with pulao or biryani.

Gulavani


Time 5 min
Ingredients
Jaggery 1/4 cup
Water 1 cup

Method
Heat pan by adding water. Then add jaggery and dissolve well by stirring continuously for 4-5 min. Then switch off flame. Add milk and serve with puran poli. (U can eat with milk or without milk)

Masala Papad

Time 5 min
Ingredients
Papad 2 
Finely chopped tomato 1 small size
Finely chopped onion 1 small size
Lemon juice 1/2 tsp
Chaat masala 1/4 tsp
Rock salt 1/2 tsp or as per taste
Finely chopped green chilies 1-2 
Finely chopped coriander 1 tbsp
Oil for frying papad

Method
Mix all ingredients in mixing bowl and keep it aside. Then deep fry or roast papad. Then place mixture over the top of papad and serve immediately.

King Fish Fry

Time 20 min
Ingredients
Surmai fish king fish slices 3 
Finely chopped coriander 3 tbsp 
Turmeric powder 1/4 tsp
Ginger garlic paste 1/2 tsp
Coriander powder 1/2 tsp
Red chili powder or chili flakes 1/2 tsp
Salt to taste
Oil for shallow fry

Method
Clean the fish. Apply turmeric powder and salt to the slices. Keep it aside for 15 min. Then shallow fry fish in fry pan till it becomes crispy and golden brown. In kadai heat 1 tbsp oil, oil becomes hot then switch off the flame. Now add coriander  powder and chili flakes in the kadai. Pour this seasoning on fish in the fry pan. Switch on the flame again fry fish for 2-3 min, sprinkle coriander. Switch off flame and then serve hot.

Tip
U can deep fry instead of shallow fry.

Sweet Potato Omelette / Pancake

Time 20 min
Ingredients
Chickpeas flour / Besan 1/4 cup
Boiled and Mashed sweet potato 1/4 cup
Dhana jeera powder 1/4 tsp
Amchur powder 1/4 tsp
Red chili powder 1/2 tsp
Turmeric powder 1/4 tsp
Freshly cut coriander 1 tsp
Water 1/4 cup
Baking soda  1-2 pinch
Salt to taste
Oil for shallow fry 1/4 cup

Method
To make a batter, take besan in a bowl then mix the remaining ingredients. The consistency of the mixture should be like dosa.  Take fry pan, heat on a medium flame. Apply oil evenly on fry pan. Pour the mixture on fry pan, spread evenly. Keep medium flame. Apply oil on the upper surface of omelette. After 4-5 min turn upside down and shallow fry for 4-5 min (Time depends upon how crispy omelette you want )

Tip
U can add green chilies instead of red chili powder.

Yam / Suran Fry



Time 20 min
Ingredients
Yam / Suran 100 gms 
Coriander+Green chilies paste 1/2 to 1 tsp 
Amchur powder 1/2 tsp
Red chili powder 1/4 tsp
Turmeric powder 1/4 tsp
Coriander powder 1/2 tsp
Kokum 2-3
Corn flour 1/2 cup
Salt to taste
Oil for shallow fry

Method
Apply oil on hand (to avoid itching) then peel & wash the suran first. Then make 1/4 inch thick slices of suran. Then boil 4-5 cups of water in pan, by adding salt and dry kokum, add suran slices boil it for 5 min on medium flame. Allow it to cool. Keep the slices and remove the water. 
Make the mixture of all ingredients except oil & cornflour. Apply to the suran slices. Keep it in refrigerator for 1/2 hrs. Then dip each slice in cornflour and shallow fry the slices till it becomes crispy and golden brown. Serve hot with any sauce.

Tip
U can deep fry instead of shallow fry.

Kolhapuri Mirchicha Kharda / Thecha

Time 10 min
Ingredients
Green chilies 5-6
Fresh coriander 2 tsp
Garlic cloves 3-4
Oil 1 tsp
Salt to taste

Method
Heat oil in kadai. Roast the green chilies and garlic for 3-4 min on medium flame. Allow it to cool. Crush with salt & coriander in khalbatta or blend it in the blender. Serve with dahi or as it is. Taste good with bhakari.

Dried Salty King Fish Fry

Time 10 min
Ingredients
Dried Salty King Fish 2 pieces
Rice flour 2 tsp
Besan 1/2 tsp
Red chili powder 1/2 tsp
Turmeric powder 1/4 tsp
It is already salted so no need to add salt
oil for deep fry

Method
First apply wheat flour to fish rub on surface then wash with water. Mix all ingredients by adding water 1-2 tsp. It looks like idli batter. Now dip fish in batter and deep fry in oil. Serve with jwari bhakri or chapati or rice bhakri.

Pasta

Time 15 min
Ingredients
Pasta 100 grms approximately 1 cup
Capsicum cut into cubes 1/2 cup 
Chopped onions lengthwise1/2 cup
Chopped spring onion greens 1 cup

Tomato Puree 1/2 cup
Grated cheese 1 tbsp
Mixed herbs 1/4 tsp
Pepper powder 1/4 tsp
Oil 2 tbsp 
Salt to taste

Method
Boil 1 lit water add 1/2 tsp salt and 1 tsp oil. Then add pasta and cook for 15 to 20 min till it cooks. Then immediately remove water and keep it side. 
Heat oil in pan, add onion, capsicum and tomato puree, fry for 3-4 min, then add mixed herbs, salt, pepper powder, mix well. Then add pasta mix well. Keep the flame high just stir for 1-2 min. Switch off the flame. Serve hot.

Coriander / Kothimbir Wadi with Poha

Time 45 min
Ingredients
Chickpeas flour/ Besan 1/2 cup
Poha 1/2 cup
Moong daal 1/4 cup
Fresh chopped coriander 3 cups
Cumin coriander powder 1/4 tsp
Turmeric Powder 1/4 tsp
Red chili powder 1/2 tsp
Ginger 1 inch
Garlic cloves 4-5 tsp
Coriander seeds 1tsp
Fennel seeds 1tsp
Grated jaggery 1 tsp
Green chilies 3-4
Water  1/2 cup
Salt to taste
Oil to add to batter 2 tsp
Oil to shallow fry vadi 1/4 cup
Cooker for steaming

Method
Soak moong daal and poha for about 1/2 hour. Now grind moong daal, poha, ginger, garlic, green chilies, turmeric powder, red chili powder, cumin coriander powder, jaggery, coriander seeds, fennel seeds, salt and 1 cup of coriander. Make smooth paste. Now add remaining chopped coriander, water 1/2 cup and oil. Mix well. If required then add 2-3 tsp water. The batter should be like idli. So that soft vadis can be prepared. 
Now grease the pressure cooker vessel with oil. Pour batter to this vessel, Keep in cooker, allow it to cook with steam for about 20-25 min. 
Keep it aside to cool. Cut it and shallow / deep fry the steamed vadi in a pan/kadai.  It tastes wonderful with rice, chapati as a side dish.

Tip
U can do the seasoning with mustard seeds, asafoetida and serve.

Rice Modak


Time 45 min
Ingredients
For stuffing
Grated fresh coconut 1 cup
Jaggery 1/2 cup or more as per the taste
Pedha / Khava/ Khoya 1 tbsp
Cardamom / Velchi powder 1/2 tsp
Pinch of Salt
Dough
Basmati rice flour 1 cup
Ghee 1 tsp
Water 1 cup
Salt to taste
For steaming
Idli stand for steaming

Method
For dough
Boil water in the vessel. Add ghee and salt. Stir well. Then add rice flour slowly by stirring continuously. Then switch off the flame. Cover with lid and keep aside for 10 min. Then knead the dough. It should be not hard or soft. Keep it aside. 
For stuffing preparation
Grate the fresh coconut. Take only white portion and avoid black skin. Now add grated coconut in thick bottom pan, add jaggery and velchi powder, salt. Switch on the flame. As soon as pan gets heated the coconut will start leaving water. Stir continuously for 5 min to avoid burning. Now add khoya to the mixture. Again stir for about 5 min. till little moisture remains in the pan. Switch off the flame. The mixture should be moist and should not be dry. 

Actual Stuffing
Divide dough into round balls of 1 inch in size. Apply ghee on the hands. Gently press evenly and make puri type shape, add 1 spoon of saaran / stuffing at the center. Now fold the sides at the center to make nice modak shape. Make remaining modaks accordingly.
Keep modak in idli stand and steam for about 10 min.
